Seared Tuna with Avocado Salsa
Ingredients:
1 Yellowfin tuna steak, about 6-8 oz
1 avocado, diced
2 tomatoes, diced
1 jalapeno, diced
1/4-1/2 of a small red onion, diced
Juice of two limes
1/4 cup olive oil, plus more to coat pan
Salt & pepper, to taste
For salad:
Arugula
Juice of two mandarin oranges
1/2 teaspoon of Dijon mustard
Olive oil
Salt & pepper
1. Combine all ingredients for the salsa in a bowl, cover & refrigerate until ready to use. Be sure to add the lime juice to the avocado immediately to prevent browning.
2. Heat olive oil in a nonstick pan. Season the tuna steak with salt & pepper. Sear for 1-2 minutes on each side for medium rare (depending on thickness).
3. Combine orange juice, mustard, olive oil & salt and pepper in a small bowl and whisk until combined. Toss with arugula, and serve beneath tuna & salsa.
